- 2 chicken breasts
- 1 ounce taco seasoning
- 1 ounce ranch seasoning mix
- 15 ounces canned black beans
- 15 ounces canned corn
- 10 ounces canned Rotel tomatoes
- 8 ounces cream cheese
Instructions
- Prepare the Crock Pot by placing trimmed chicken breasts at the bottom. Top with black beans, corn, and Rotel tomatoes. Sprinkle taco and ranch seasoning over everything, then add cream cheese on top.
- Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours until chicken is cooked through.
- Shred chicken using two forks and stir to combine with melted cream cheese.
- Serve hot in bowls topped with tortilla strips, shredded cheese, avocado slices, fresh lime juice, and chopped cilantro.
