Ingredients
- 8 fresh pineapple rings
- 1 cup dark vanilla extract (alcohol-free)
- 1 cup coconut vanilla extract (alcohol-free)
- 1 1/2 cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil for frying
- 4 oz cream cheese
- 1/2 cup powdered sugar
Instructions
- Soak pineapple rings in dark and coconut vanilla extracts for at least 1 hour. Drain and pat dry.
- Set up three shallow bowls: one with flour, another with whisked eggs and coconut milk, and the last with coconut flakes.
- Coat each pineapple ring in flour, dip into the egg mixture, then press into coconut flakes.
- Heat vegetable oil in a deep pot to about 350°F (175°C). Fry rings until golden brown on both sides (about 1 minute each). Transfer to paper towels to drain.
- For the dipping sauce, mix softened cream cheese with powdered sugar until smooth. Stir in reserved vanilla extract for flavor.
