  • 8 fresh pineapple rings
  • 1 cup dark vanilla extract (alcohol-free)
  • 1 cup coconut vanilla extract (alcohol-free)
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese
  • 1/2 cup powdered sugar

Instructions

  1. Soak pineapple rings in dark and coconut vanilla extracts for at least 1 hour. Drain and pat dry.
  2. Set up three shallow bowls: one with flour, another with whisked eggs and coconut milk, and the last with coconut flakes.
  3. Coat each pineapple ring in flour, dip into the egg mixture, then press into coconut flakes.
  4. Heat vegetable oil in a deep pot to about 350°F (175°C). Fry rings until golden brown on both sides (about 1 minute each). Transfer to paper towels to drain.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar until smooth. Stir in reserved vanilla extract for flavor.
