Ingredients
- 200ml milk
- 1 teaspoon pure vanilla extract
- 2 egg yolks
- 45g powdered sugar
- 20g cornstarch
- 20g softened butter
- 250ml warm milk
- 50ml heavy cream
- 75g powdered sugar
- 7g instant dry yeast
- 40g active sourdough starter
- 3g salt
- 165g bread flour
- 385g all-purpose flour
- 70g softened butter
- 130g dark chocolate chips
- 1 egg for glazing
- 2 tablespoons sugar for syrup
- 2 tablespoons boiling water
Instructions
- Prepare the vanilla custard by heating milk with vanilla extract and whisking in egg yolks mixed with sugar and cornstarch until thickened. Chill.
- In a stand mixer, combine warm milk, cream, sugar, and yeast. Let it froth before adding flours and salt. Mix until smooth; add softened butter.
- Allow dough to rise until doubled in size. Roll out into a rectangle, spread chilled custard evenly over it and sprinkle with chocolate chips.
- Cut into strips and twist into spirals. Let rise again before brushing with egg wash.
- Bake at 200°C (392°F) until golden brown.
