Ingredients

  • 200ml milk
  • 1 teaspoon pure vanilla extract
  • 2 egg yolks
  • 45g powdered sugar
  • 20g cornstarch
  • 20g softened butter
  • 250ml warm milk
  • 50ml heavy cream
  • 75g powdered sugar
  • 7g instant dry yeast
  • 40g active sourdough starter
  • 3g salt
  • 165g bread flour
  • 385g all-purpose flour
  • 70g softened butter
  • 130g dark chocolate chips
  • 1 egg for glazing
  • 2 tablespoons sugar for syrup
  • 2 tablespoons boiling water

Instructions

  1. Prepare the vanilla custard by heating milk with vanilla extract and whisking in egg yolks mixed with sugar and cornstarch until thickened. Chill.
  2. In a stand mixer, combine warm milk, cream, sugar, and yeast. Let it froth before adding flours and salt. Mix until smooth; add softened butter.
  3. Allow dough to rise until doubled in size. Roll out into a rectangle, spread chilled custard evenly over it and sprinkle with chocolate chips.
  4. Cut into strips and twist into spirals. Let rise again before brushing with egg wash.
  5. Bake at 200°C (392°F) until golden brown.
