- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3/4 cup toffee bits
- For glaze: 2 tablespoons butter
- 1/2 cup powdered sugar
- 1 tablespoon milk or cream
- 2 tablespoons extra toffee bits
Instructions
- Cream softened butter and powdered sugar in a large bowl until fluffy.
- Mix in vanilla extract, then gradually add flour and salt until combined.
- Fold in the toffee bits evenly.
- Divide dough into two logs, wrap tightly in plastic wrap, and chill for at least 2 hours.
- Preheat oven to 350°F (175°C). Slice chilled dough into 1/4-inch rounds.
- Place on parchment-lined baking sheets and bake for 10–12 minutes until edges are lightly golden.
- Cool on wire racks before glazing with melted butter mixed with powdered sugar and milk.
