Ingredients
- 1 cup bulgur
- 2 cups water
- 1 tomato (chopped)
- 1 onion (chopped)
- 1 cucumber (chopped)
- Fresh parsley (chopped)
- Fresh mint (chopped)
- 4 tbsp olive oil
- 1 tsp lemon juice
- 1/4 tsp salt
- 1 pinch black pepper
Instructions
- Cook the bulgur in water according to package instructions. Once cooked, transfer it to a bowl and let it cool.
- Chop the tomato, onion, cucumber, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing.
- In a large mixing bowl, combine cooled bulgur with all the chopped vegetables and herbs. Pour the dressing over the salad and toss gently to combine before serving.
