- 1 lb lean ground beef
- 4 small sweet potatoes
- 1 bag shredded lettuce (8 oz)

- 1/2 cup pickles (diced)
- 1 tablespoon avocado oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder

Instructions
- Preheat your oven to 400°F.
- Peel and dice the sweet potatoes. Toss them in avocado oil and seasonings before roasting on a baking sheet for 30-40 minutes.
- While the sweet potatoes bake, cook ground beef in a skillet with seasonings until browned.
- Assemble your bowls starting with shredded lettuce, followed by roasted sweet potatoes, beef, veggies, and special sauce.
