Ingredients
- 2 cups diced fresh pineapple
- 1 large English cucumber (or 2 Persian cucumbers), diced
- 1/4 small red onion, thinly sliced
- 1/4 cup chopped cilantro leaves
- 1 small jalapeño, thinly sliced (optional)
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash and prepare all produce. Dice the pineapple and cucumber, slice the red onion and jalapeño, and chop cilantro.
- In a large mixing bowl, combine the diced pineapple, cucumber, red onion, cilantro, and jalapeño.
- In a separate bowl, whisk together lime juice, honey or maple syrup, olive oil, salt, and black pepper.
- Pour the dressing over the salad mixture and toss gently until well combined. Allow it to sit for about 5 minutes before serving.
