Instructions
- Place the chicken in the slow cooker.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger until combined.
- Pour the sauce over the chicken.
- Cover and cook on low for about 5 hours or until the chicken is tender.
- Combine cornstarch with water to create a slurry; add it to the slow cooker and stir well.
- Cook on high for an additional 30 minutes until thickened.
- Serve over rice with garnishes like pineapple chunks and sliced bell pepper.
