- ¼ cup all-purpose flour
- ⅓ cup buttermilk
- 1 egg
- 1 teaspoon Old Bay seasoning
- ¼ teaspoon Kosher salt
- 1 small onion (grated)
- ½ cup corn kernels (canned, fresh, or frozen)
- ½ cup lump crab meat
- Oil for frying (vegetable or canola oil)
Instructions
- Heat oil in a deep frying pan or fryer to 350°F.
- In a large bowl, mix buttermilk, egg, and grated onion until well combined.
- Add Jiffy mix, flour, salt, and Old Bay seasoning; stir until integrated.
- Gently fold in corn kernels and lump crab meat.
- Carefully drop batter by tablespoons into hot oil. Fry for about 3-4 minutes per side until golden brown.
- Serve warm with lemon wedges or your favorite dipping sauces.
