- ¾ cup sugar
- ½ cup milk
- ½ cup oil
- 2 eggs
- 1 teaspoon vanilla
- 1 ½ cups flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 ½ cups diced strawberries (fresh or frozen)
- 2 tablespoons all-purpose flour (for coating strawberries)
Instructions
- Preheat oven to 350°F and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together sugar, milk, oil, eggs, and vanilla until well combined.
- In another bowl, mix flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture; stir gently until just combined.
- Toss diced strawberries with 2 tablespoons of flour; fold into the batter.
- Pour into the prepared loaf pan and bake for 55-60 minutes until golden brown and a toothpick comes out clean.
- Let cool in the pan for 5 minutes before transferring to a cooling rack.
