Ingredients
For the Base:
1/4 cup coconut oil, melted
1/4 cup cane sugar
1 large egg
1/2 cup all-purpose flour
1/2 cup oat flour
1/4 teaspoon cinnamon
1/4 teaspoon salt
For the Strawberry Filling:
1 pound strawberries, small diced
2 tablespoons cane sugar
1 tablespoon lemon juice
For the Topping:
1/4 cup oat flour
1/4 cup all-purpose flour
1/4 cup coconut oil, melted
1/4 cup cane sugar
1/4 teaspoon salt
1 1/2 cups rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, whisk together the melted coconut oil, cane sugar, and egg until smooth.
- Add the all-purpose flour, oat flour, cinnamon, and salt. Mix until a soft dough forms.
- Press the dough evenly into the bottom of the prepared baking pan to form the base layer.
- In another bowl, combine the diced strawberries, cane sugar, and lemon juice. Stir well and spread the mixture evenly over the base.
- In a separate bowl, mix the oat flour, all-purpose flour, melted coconut oil, cane sugar, salt, and rolled oats until crumbly.
- Sprinkle the oat crumble mixture evenly over the strawberry filling.
- Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbly.
- Allow the bars to cool completely in the pan before slicing into squares.
