Instructions
- Prep your water bath canner by boiling water and gathering pint jars, lids, and bands.
- Puree the strawberries in a food processor until smooth and transfer to a large saucepan.
- Add lemon juice and sugar to the strawberry puree; heat gently until it reaches 190-200°F without boiling.
- Fill hot jars with the mixture, leaving 1/4 inch headspace. Secure lids and bands fingertip tight.
- Process jars in boiling water for 15 minutes, then let them cool undisturbed for 12-24 hours to seal properly.
