- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter (softened)
- 3 large eggs
- 1 cup whole milk
- ¾ cup fresh lemon juice
- Zest of 1 lemon
- 2 cups fresh strawberries (chopped)
- 2 tsp baking powder
- ½ tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
- In a bowl, mix flour, baking powder, and salt; set aside.
- In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time.
- Stir in lemon juice and zest into the creamed mixture.
- Gradually add dry ingredients and milk alternately until combined. Fold in chopped strawberries gently.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for ten minutes before transferring to wire racks to cool completely.
