Ingredients

  • 5 tablespoons melted butter
  • 1½ cups graham cracker crumbs
  • 16 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • 1 cup cold whipping cream
  • 10 fresh strawberries, sliced
  • 8 ounces Cool Whip
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 3 tablespoons strawberry vegan gelatin

Instructions

  1. Combine melted butter, graham cracker crumbs, sugar, and almond extract in a mixing bowl; mix well.
  2. Press the mixture into the bottom of a 9×13 inch dish to form the crust.
  3. Layer sliced strawberries over the crust.
  4. In another bowl, beat cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
  5. Whip the cold whipping cream until stiff peaks form; fold into the cream cheese mixture.
  6. Spread half of the cream cheese mixture over strawberries; sprinkle half of the vegan gelatin on top.
  7. Repeat layering with remaining strawberries and cream cheese mixture.
  8. Top with Cool Whip and garnish with extra graham cracker crumbs if desired.
  9. Cover tightly with plastic wrap and refrigerate for at least 2 hours before serving.
