- 1/2 cup softened butter
- 1 cup white sugar
- 2 eggs
- 4 tablespoons sour cream
- 1 medium-large banana, mashed
- 3 oz strawberry Jell-O mix
- 1/2 lb strawberries, chopped
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mash the banana until smooth and set aside.
- Puree chopped strawberries with the strawberry Jell-O mix in a food processor until smooth.
- In a stand mixer, cream together softened butter and sugar until fluffy.
- Add eggs and sour cream to the butter mixture; beat until well combined.
- In another bowl, whisk together flour, baking powder, salt, and baking soda.
- Mix the strawberry puree into the wet ingredients on low speed.
- Gradually add dry ingredients to the wet mixture; mix just until combined.
- Pour batter into a greased loaf pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
