  • 1/2 cup softened butter
  • 1 cup white sugar
  • 2 eggs
  • 4 tablespoons sour cream
  • 1 medium-large banana, mashed
  • 3 oz strawberry Jell-O mix
  • 1/2 lb strawberries, chopped
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mash the banana until smooth and set aside.
  3. Puree chopped strawberries with the strawberry Jell-O mix in a food processor until smooth.
  4. In a stand mixer, cream together softened butter and sugar until fluffy.
  5. Add eggs and sour cream to the butter mixture; beat until well combined.
  6. In another bowl, whisk together flour, baking powder, salt, and baking soda.
  7. Mix the strawberry puree into the wet ingredients on low speed.
  8. Gradually add dry ingredients to the wet mixture; mix just until combined.
  9. Pour batter into a greased loaf pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
