  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 8 tbsp butter
  • 1 cup mashed bananas (about 2 bananas)
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • 3/4 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a large bowl, cream together granulated sugar, brown sugar, and butter until fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Pour into the prepared dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. For the toffee sauce: Melt butter and brown sugar in a pot over medium-low heat. Stir in heavy cream and vanilla; cook until smooth.
  7. Once the cake is slightly cooled, poke holes in it and pour the toffee sauce over it. Let it soak for at least an hour before serving.
