  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F.
  2. Drizzle chicken breasts with olive oil and season both sides with paprika, garlic powder, onion powder, and salt.
  3. Cut pockets into each chicken breast carefully.
  4. In a mixing bowl, combine cream cheese, Parmesan cheese, spinach, mayonnaise, garlic, red pepper flakes, and remaining salt until well mixed.
  5. Stuff each chicken breast pocket with the filling mixture.
  6. Bake in a baking dish for 25-30 minutes until cooked through.
