- 1 lb boneless chicken breasts/thighs
- 2 cups corn (fresh, frozen, or canned)
- 4 oz cream cheese (or vegan alternative)
- 1/3 cup cotija cheese (or feta)
- Juice of 1 lime
- 2 cloves garlic (minced)
- Spices: chili powder, smoked paprika, onion powder
- Fresh cilantro (optional)
Instructions
- Gather all ingredients and tools. Mince garlic and juice lime.
- Place chicken at the bottom of the slow cooker; layer corn on top.
- In a bowl, mix cream cheese, cotija cheese, lime juice, garlic, chili powder, smoked paprika, and onion powder until smooth.
- Pour the cheese mixture over chicken and corn.
- Cover and cook on low for about 4 hours or until chicken is cooked through.
- Shred chicken in the slow cooker and mix everything together. Garnish with cilantro if desired.
