Ingredients
- 1 pound dried red beans
- 1 link Andouille sausage (quartered)
- 2 links smoked sausage (sliced)
- 1 yellow onion (diced)
- 1 rib celery (diced)
- 4 cloves garlic (minced)
- 3 bay leaves
- 6 cups water
- 2 beef bouillon cubes
- 1 tablespoon Cajun seasoning
Instructions
- Rinse the dried red beans under cold water. Dice the onion, celery, garlic, and sausages into bite-sized pieces.
- Add all ingredients to the slow cooker: red beans, sausages, onion, celery, garlic, bay leaves, beef bouillon cubes, Cajun seasoning, and water.
- Cover and cook on high for about 6 hours.
- For creamier beans, mash some against the side of the pot before serving.
- Serve generously over steamed rice.
