  • 1 pound dried red beans
  • 1 link Andouille sausage (quartered)
  • 2 links smoked sausage (sliced)
  • 1 yellow onion (diced)
  • 1 rib celery (diced)
  • 4 cloves garlic (minced)
  • 3 bay leaves
  • 6 cups water
  • 2 beef bouillon cubes
  • 1 tablespoon Cajun seasoning

Instructions

  1. Rinse the dried red beans under cold water. Dice the onion, celery, garlic, and sausages into bite-sized pieces.
  2. Add all ingredients to the slow cooker: red beans, sausages, onion, celery, garlic, bay leaves, beef bouillon cubes, Cajun seasoning, and water.
  3. Cover and cook on high for about 6 hours.
  4. For creamier beans, mash some against the side of the pot before serving.
  5. Serve generously over steamed rice.
