Ingredients
- Rice noodles
- Water
- Cucumber, sliced thinly
- Red bell pepper, julienned
- Carrots, grated or julienned
- Green onions, chopped
- Fresh cilantro, chopped
- Fresh mint, chopped
- Lime juice
- Soy sauce
- Sugar
- Sesame oil
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water.
- While noodles cook, slice the cucumber, julienne the red bell pepper and carrots, and chop the green onions.
- In a small bowl, whisk together lime juice, soy sauce, sugar, and sesame oil.
- In a large mixing bowl, combine cooked noodles and prepared vegetables. Pour dressing over the top and toss gently to mix.
- Add fresh cilantro and mint on top before serving.
