Ingredients

  • Rice noodles
  • Water
  • Cucumber, sliced thinly
  • Red bell pepper, julienned
  • Carrots, grated or julienned
  • Green onions, chopped
  • Fresh cilantro, chopped
  • Fresh mint, chopped
  • Lime juice
  • Soy sauce
  • Sugar
  • Sesame oil

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  2. While noodles cook, slice the cucumber, julienne the red bell pepper and carrots, and chop the green onions.
  3. In a small bowl, whisk together lime juice, soy sauce, sugar, and sesame oil.
  4. In a large mixing bowl, combine cooked noodles and prepared vegetables. Pour dressing over the top and toss gently to mix.
  5. Add fresh cilantro and mint on top before serving.
