Ingredients
- 1 pound fresh strawberries
- 1/3 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon cornstarch
- 2 teaspoons water
- 1/2 teaspoon vanilla extract
Instructions
- Wash and hull the strawberries, then slice them.
- In a medium saucepan, combine sliced strawberries, lemon juice, and sugar. Cook over medium-high heat until boiling.
- Reduce heat to medium and simmer for 10-15 minutes until thickened.
- Mix cornstarch and water in a small bowl to create a slurry, then stir into the strawberry mixture.
- Bring back to a boil while stirring continuously for 30 seconds.
- Remove from heat and stir in vanilla extract. Allow to cool before refrigerating.
