- 1 lb chicken breast, cubed
- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- ⅓ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- Chopped green onions for garnish
Instructions
- Heat oil in a skillet over medium heat; sauté cubed chicken until browned and cooked through. Remove from pan.
- In the same skillet, add minced garlic and sauté until fragrant. Pour in soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Simmer briefly to blend flavors.
- Mix cornstarch with water to create a slurry; stir into the sauce until thickened.
- Return chicken to the pan along with pineapple chunks and diced red bell pepper; combine everything well.
- Add cooked rice, stirring to heat through and coat evenly with sauce.
- Garnish with chopped green onions before serving.
