  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • Chopped green onions for garnish

Instructions

  1. Heat oil in a skillet over medium heat; sauté cubed chicken until browned and cooked through. Remove from pan.
  2. In the same skillet, add minced garlic and sauté until fragrant. Pour in soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Simmer briefly to blend flavors.
  3. Mix cornstarch with water to create a slurry; stir into the sauce until thickened.
  4. Return chicken to the pan along with pineapple chunks and diced red bell pepper; combine everything well.
  5. Add cooked rice, stirring to heat through and coat evenly with sauce.
  6. Garnish with chopped green onions before serving.
