  • 1 3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 to 4 medium)
  • Optional: 1/2 to 2/3 cups chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. In another bowl, use an electric mixer to beat softened butter with brown sugar and peanut butter until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Gradually combine dry ingredients with the wet mixture in three parts, alternating with two portions of sour cream until fully incorporated.
  5. Fold in mashed bananas and optional nuts.
  6. Pour batter into prepared loaf pan and bake for 50 to 55 minutes or until golden brown; check doneness with a toothpick.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
