  • 1 ½ cups sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 2 cups creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking powder
  • 2 cups strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a mixing bowl, cream together the softened butter, peanut butter, and sugar until light and fluffy (about 3-4 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
  4. In another bowl, whisk together flour and baking powder. Gradually add this mixture to the wet ingredients until a dough forms.
  5. Press two-thirds of the dough evenly into the prepared dish for the base layer.
  6. Spread the strawberry jam evenly over the base layer.
  7. Crumble the remaining dough over the jam layer.
  8. Bake for 30-35 minutes or until golden brown on top.
  9. Allow to cool completely before lifting out of the pan using parchment overhang to cut into bars.
