  • 1/4 cup superfine sugar
  • 1 and 1/2 cups chilled whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter (softened to room temperature)
  • 4 cups all-purpose flour (plus extra for rolling and shaping)
  • 2 teaspoons sea salt
  • 1 bar dark chocolate (roughly chopped (semi-sweet or bittersweet))
  • 2 tablespoons all-purpose flour
  • 1 tablespoon brown sugar
  • 1 and 1/2 cups unsalted butter (softened)
  • 2 tablespoons whole milk
  • 1 large egg
  • Powdered sugar for a light dusting at the end

Instructions

  1. In a mixing bowl, combine yeast, superfine sugar, and chilled milk; let sit until frothy.
  2. Add ground cinnamon, softened butter, flour, and sea salt; stir until dough forms. Knead until smooth and let rise in a greased bowl for 2 hours.
  3. Roll out softened butter between parchment paper into a rectangle; chill.
  4. Roll out risen dough into a larger rectangle, encase the butter block within it, and laminate through folding and chilling three times.
  5. Shape croissants by cutting triangles from the dough and rolling them with chopped chocolate inside.
  6. Allow shaped croissants to rise for about an hour on a baking sheet lined with parchment paper.
  7. Preheat oven to 375°F (190°C), brush croissants with egg wash, then bake for 20 minutes or until golden brown.
