Ingredients
- 1 tablespoon active dry or instant yeast
- 1/4 cup superfine sugar
- 1 and 1/2 cups chilled whole milk
- 1/4 teaspoon ground cinnamon
- 1/4 cup unsalted butter (softened to room temperature)
- 4 cups all-purpose flour (plus extra for rolling and shaping)
- 2 teaspoons sea salt
- 1 bar dark chocolate (roughly chopped (semi-sweet or bittersweet))
- 2 tablespoons all-purpose flour
- 1 tablespoon brown sugar
- 1 and 1/2 cups unsalted butter (softened)
- 2 tablespoons whole milk
- 1 large egg
- Powdered sugar for a light dusting at the end
Instructions
- In a mixing bowl, combine yeast, superfine sugar, and chilled milk; let sit until frothy.
- Add ground cinnamon, softened butter, flour, and sea salt; stir until dough forms. Knead until smooth and let rise in a greased bowl for 2 hours.
- Roll out softened butter between parchment paper into a rectangle; chill.
- Roll out risen dough into a larger rectangle, encase the butter block within it, and laminate through folding and chilling three times.
- Shape croissants by cutting triangles from the dough and rolling them with chopped chocolate inside.
- Allow shaped croissants to rise for about an hour on a baking sheet lined with parchment paper.
- Preheat oven to 375°F (190°C), brush croissants with egg wash, then bake for 20 minutes or until golden brown.
