  • 4 tablespoons olive oil or melted butter
  • 4-6 garlic cloves, minced (about 2 tablespoons)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Remove damaged outer leaves from the cabbage and slice it into 1-inch thick rounds.
  3. Arrange cabbage slices on the baking sheet in a single layer, ensuring they are spaced apart.
  4. In a small bowl, mix together olive oil or melted butter, minced garlic, salt, black pepper, thyme, and red pepper flakes if using.
  5. Coat both sides of each cabbage slice generously with the garlic-oil mixture using a pastry brush.
  6. Roast in the preheated oven for 15 minutes, then reduce temperature to 375°F (190°C) and continue roasting for another 15-20 minutes until edges are golden brown and centers are tender.
  7. Drizzle freshly squeezed lemon juice over the roasted steaks before serving.
