- 1 (4-5 lb) lamb shoulder
- 2 tbsp olive oil
- 2 tbsp Moroccan spice blend
- 1 tsp salt
- 1 tsp black pepper
- 4 garlic cloves, minced
- 1 onion, sliced
- 1 lemon, sliced
- 1 cup chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- Rub the lamb shoulder with olive oil, Moroccan spice blend, salt, and black pepper. Make small cuts in the meat and insert minced garlic.
- In a roasting pan, arrange sliced onions and lemons as a base and place the seasoned lamb on top.
- Pour chicken broth around the lamb and cover with aluminum foil. Roast for 3 hours.
- Remove foil and roast uncovered for an additional 30 minutes for a golden crust.
- Let the lamb rest for about 15 minutes before slicing.
