  • 2 tbsp olive oil
  • 2 tbsp Moroccan spice blend
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 garlic cloves, minced
  • 1 onion, sliced
  • 1 lemon, sliced
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rub the lamb shoulder with olive oil, Moroccan spice blend, salt, and black pepper. Make small cuts in the meat and insert minced garlic.
  3. In a roasting pan, arrange sliced onions and lemons as a base and place the seasoned lamb on top.
  4. Pour chicken broth around the lamb and cover with aluminum foil. Roast for 3 hours.
  5. Remove foil and roast uncovered for an additional 30 minutes for a golden crust.
  6. Let the lamb rest for about 15 minutes before slicing.
