- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ½ cup powdered sugar
- ½ cup canola oil
- 1¼ teaspoons pure vanilla extract
- ¼ teaspoon almond extract
- 1 large egg
- 2⅓ cups all-purpose flour
- ¾ teaspoon baking soda
- ¾ teaspoon cream of tartar
- ½ teaspoon salt
- ¾ cup granulated sugar (for rolling and sprinkling)
Instructions
- Preheat your oven to 350°F and line three baking sheets with parchment paper.
- In a large bowl, beat together the softened butter, granulated sugar, and powdered sugar until creamy. Mix in the canola oil until combined, then add the egg and both extracts.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually incorporate this into the wet mixture until just combined.
- Set aside some granulated sugar for topping. Roll dough into balls and coat in sugar before placing on baking sheets.
- Flatten slightly with a cookie stamp or glass bottom.
- Bake for about 9-12 minutes until puffed and edges are set. Sprinkle with reserved sugar immediately after removing from the oven.
