  • 1/2 cup unsalted butter (cold)
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • Fresh strawberries for topping
  • Fresh blueberries for topping

Instructions

  1. Prepare the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until pea-sized. Mix in egg and vanilla until a dough forms. Chill for at least one hour.
  2. Roll out the chilled dough and cut into rounds to fit mini tart pans. Press into pans, chill again, then bake at 350°F for about 15-20 minutes until golden.
  3. For the pastry cream, heat milk with vanilla. In a bowl, whisk egg yolks, granulated sugar, cornstarch, and salt; temper with hot milk mixture. Cook until thickened, then cool completely.
  4. Assemble by filling cooled tart shells with pastry cream and topping with fresh fruit.
