Ingredients
- 1/2 cup unsalted butter (cold)
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 3/4 cups milk
- 5 egg yolks
- 1/2 cup granulated sugar
- Fresh strawberries for topping
- Fresh blueberries for topping
Instructions
- Prepare the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until pea-sized. Mix in egg and vanilla until a dough forms. Chill for at least one hour.
- Roll out the chilled dough and cut into rounds to fit mini tart pans. Press into pans, chill again, then bake at 350°F for about 15-20 minutes until golden.
- For the pastry cream, heat milk with vanilla. In a bowl, whisk egg yolks, granulated sugar, cornstarch, and salt; temper with hot milk mixture. Cook until thickened, then cool completely.
- Assemble by filling cooled tart shells with pastry cream and topping with fresh fruit.
