- 6 cups chopped romaine lettuce
- 1 cup chopped grape tomatoes
- 1 large cucumber, diced
- 1/4 cup diced red onion
- 1 cup cooked quinoa
- 2 cooked chicken breasts, diced
- 1/2 cup pepperoncini
- 1/3 cup feta cheese (optional)
- 1/3 cup olive oil
- 3 tablespoons apple vinegar
- 1 1/2 teaspoons dijon mustard
- Juice from 1 lemon
- 2 teaspoons minced garlic
- 3/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the lettuce by washing and chopping it into bite-sized pieces. Place it in a large mixing bowl.
- Add chopped grape tomatoes, diced cucumber, diced red onion, cooked quinoa, diced chicken breasts, pepperoncini, and feta cheese (if using).
- In a separate bowl or shaker, whisk together olive oil, apple vinegar, Dijon mustard, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Pour the dressing over the salad ingredients and toss gently until everything is well combined.
- Serve immediately or store in an airtight container for meal prep.
