  • 6 cups chopped romaine lettuce
  • 1 cup chopped grape tomatoes
  • 1 large cucumber, diced
  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts, diced
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese (optional)
  • 1/3 cup olive oil
  • 3 tablespoons apple vinegar
  • 1 1/2 teaspoons dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the lettuce by washing and chopping it into bite-sized pieces. Place it in a large mixing bowl.
  2. Add chopped grape tomatoes, diced cucumber, diced red onion, cooked quinoa, diced chicken breasts, pepperoncini, and feta cheese (if using).
  3. In a separate bowl or shaker, whisk together olive oil, apple vinegar, Dijon mustard, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  4. Pour the dressing over the salad ingredients and toss gently until everything is well combined.
  5. Serve immediately or store in an airtight container for meal prep.
