Instructions
- In a mixing bowl, combine rolled oats, chia seeds, and shredded coconut; mix well.
- In another bowl, whisk together coconut milk, maple syrup, and vanilla extract until combined.
- Pour the wet ingredients into the dry mixture and stir until evenly coated.
- Gently fold in half of the diced mango, reserving the rest for topping.
- Transfer to mason jars or airtight containers and refrigerate overnight (or at least 4 hours).
- In the morning, stir the oats and top with remaining mango, sliced almonds, and extra shredded coconut as desired.
