Ingredients
- 2 cups Heavy cream (cold)
- 4 tbsp Lemon juice
- 2 tbsp Lemon zest
- 1/2 cup Lemon curd
- 2/3 cup Granulated sugar
- 1 tsp Vanilla extract
- 15.87 oz Mascarpone cheese (room temp)
- 27 Ladyfingers
- 1 cup Lemon syrup
- 1/3 cup Lemon juice
- 1 tbsp Lemon zest
- 2/3 cup Granulated sugar
- 1/3 cup Butter
- 1/4 tsp Kosher salt
- 1 Egg
- 3 Egg yolks
Instructions
- Prepare the lemon curd by cooking butter, sugar, salt, eggs, and yolks over medium heat until thickened. Stir in lemon juice and zest; cool completely.
- Whip cold heavy cream until soft peaks form. Fold in sugar, vanilla extract, lemon juice, lemon zest, and mascarpone until smooth.
- Dip ladyfingers briefly in lemon syrup and layer half in a 9×13 inch dish. Spread half of the cream mixture over them followed by half of the lemon curd. Repeat layers.
- Chill for at least 4 hours before serving. Garnish with extra lemon zest if desired.
