Instructions
- In a mixing bowl, combine cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Mix gently until combined.
- Scoop out tablespoon-sized portions of the mixture and roll into balls.
- Preheat your oven to 350°F (175°C) and place the bites on a parchment-lined baking sheet.
- Bake for 10-12 minutes until golden brown.
- Allow to cool for a few minutes before serving; drizzle with additional honey if desired.
