  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare fruits by washing and cutting them into bite-sized pieces.
  2. Lightly spray a bundt pan with pan spray.
  3. In a medium bowl, sprinkle vegan gelatin over 1 cup of apple juice and set aside.
  4. In a small saucepan, bring the remaining apple juice, sugar, and lemon juice to a boil; pour over the gelatin mixture and whisk until dissolved.
  5. Layer fruits in the bundt pan in the order: raspberries, mangoes, strawberries, green grapes, and red grapes.
  6. Pour the gelatin mixture over the layered fruits until fully covered.
  7. Refrigerate for 3-4 hours or until set.
  8. To serve, dip the bundt pan in hot water briefly and invert onto a serving plate.
