Ingredients
- 12 oz fresh raspberries
- 2 large fresh mangoes, cubed
- 1 lb fresh strawberries, cubed
- 1 lb green grapes, halved
- 1 lb red grapes, halved
- 4 cups apple juice
- 4 packets unflavored vegan gelatin
- 3 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Prepare fruits by washing and cutting them into bite-sized pieces.
- Lightly spray a bundt pan with pan spray.
- In a medium bowl, sprinkle vegan gelatin over 1 cup of apple juice and set aside.
- In a small saucepan, bring the remaining apple juice, sugar, and lemon juice to a boil; pour over the gelatin mixture and whisk until dissolved.
- Layer fruits in the bundt pan in the order: raspberries, mangoes, strawberries, green grapes, and red grapes.
- Pour the gelatin mixture over the layered fruits until fully covered.
- Refrigerate for 3-4 hours or until set.
- To serve, dip the bundt pan in hot water briefly and invert onto a serving plate.
