Ingredients
- 1 can chickpeas (drained and rinsed)
- 1 can white kidney beans (drained and rinsed)
- 4 ounces turkey (cubed)
- 2 ounces cheese (cubed)
- 1 bell pepper (diced)
- 1 cup cherry or grape tomatoes (quartered)
- 1/2 red onion (diced)
- 1/2 cup pickled banana peppers (chopped)
- 1/4 cup olive oil
- 2 tablespoons mayonnaise
- 1/4 cup apple cider vinegar
- 1 tablespoon banana pepper brine
- 1/2 tablespoon dijon mustard
- 2 cloves garlic (minced)
Instructions
- In a small bowl, whisk together all ingredients for the dressing until smooth. Set aside.
- In a large mixing bowl, combine all salad ingredients. Pour in the dressing and mix until well coated.
- Serve immediately or store in an airtight container in the refrigerator for later.
