  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash bananas until you have 2 1/4 cups.
  2. In a bowl, mix flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with both sugars. Add cinnamon, eggs, vanilla, and mashed bananas; mix well.
  4. Combine wet and dry ingredients gently without overmixing.
  5. Pour batter into a greased pan; cover with foil.
  6. Place trivet in the Instant Pot with 1 cup of water and insert the pan.
  7. Seal the lid and cook on manual mode for 50 minutes; perform quick release afterward.
  8. Let cool slightly before transferring to a rack to cool completely before slicing.
