- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash bananas until you have 2 1/4 cups.
- In a bowl, mix flour, salt, baking soda, and nutmeg.
- In another bowl, cream butter with both sugars. Add cinnamon, eggs, vanilla, and mashed bananas; mix well.
- Combine wet and dry ingredients gently without overmixing.
- Pour batter into a greased pan; cover with foil.
- Place trivet in the Instant Pot with 1 cup of water and insert the pan.
- Seal the lid and cook on manual mode for 50 minutes; perform quick release afterward.
- Let cool slightly before transferring to a rack to cool completely before slicing.
