- 1 can pineapple rings
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 1 cup milk
- 1 egg
- 1 cup shredded coconut
Instructions
- In a mixing bowl, combine all-purpose flour, baking powder, sugar, milk, and egg. Stir until smooth and refrigerate for 2 hours.
- Drain and pat dry the pineapple rings if using canned; slice fresh pineapple into rings.
- Dip each ring into the batter until fully coated.
- Roll the battered pineapple in shredded coconut until well covered.
- Heat oil in a heavy skillet over medium-high heat and fry coated rings until golden brown (about 3-4 minutes per side). Drain on paper towels.
- Serve warm with whipped cream or fruit dip.
