Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Sauté onion, celery, carrot, and garlic until softened (about 5 minutes).
  2. Sprinkle in flour, stirring continuously for about a minute.
  3. Gradually add seafood stock or chicken broth along with Old Bay seasoning, salt, and pepper. Bring to a simmer.
  4. Stir in half-and-half or heavy cream and let simmer gently for about 10 minutes until slightly thickened.
  5. Gently fold in lump crab meat and heat through without boiling.
