Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 chopped onion
- 2 stalks celery
- 1 medium carrot
- 2 cloves garlic
- 1 tablespoon flour
- 4 cups seafood stock or chicken broth
- 1 cup half-and-half or heavy cream
- 1 tablespoon Old Bay seasoning
- 1 pound lump crab meat
- Fresh parsley for garnish
- Lemon wedges for garnish
Instructions
- In a large pot, melt butter with olive oil over medium heat. Sauté onion, celery, carrot, and garlic until softened (about 5 minutes).
- Sprinkle in flour, stirring continuously for about a minute.
- Gradually add seafood stock or chicken broth along with Old Bay seasoning, salt, and pepper. Bring to a simmer.
- Stir in half-and-half or heavy cream and let simmer gently for about 10 minutes until slightly thickened.
- Gently fold in lump crab meat and heat through without boiling.
- Serve hot, garnished with fresh parsley and lemon wedges.
