Ingredients

  • 1/2 cup unsalted butter (cold)
  • 1/4 cup whole milk (warm)
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually add warm milk while stirring until a shaggy dough forms.
  2. Knead the dough on a floured surface until smooth to develop gluten structure.
  3. Flatten cold butter between parchment sheets into a rectangle and chill.
  4. Roll out the dough into a rectangle; place chilled butter on one half and fold over to encase it.
  5. Roll out again and fold into thirds; repeat twice to create layers.
  6. Cut triangles from the dough and roll from base to tip to form croissants.
  7. Place on lined trays to proof until doubled in size (about 1 hour). Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
