Ingredients
- 2½ cups all-purpose flour
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 cup buttermilk
- 2 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- For the cinnamon filling: ⅓ cup brown sugar, 1 Tbsp ground cinnamon, 2 Tbsp melted butter
- For the vanilla glaze: 1 cup powdered sugar, 2–3 Tbsp milk, ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
- In another bowl, cream together softened butter and granulated sugar until light and fluffy. Mix in eggs one at a time and add vanilla extract.
- Gradually mix in the buttermilk alternately with the dry ingredients until just combined.
- For the cinnamon filling, mix together brown sugar, cinnamon, and melted butter to form a paste.
- Layer half of the batter in the pan, add spoonfuls of cinnamon filling on top, then swirl it through with a knife. Add remaining batter and smooth the top.
- Bake for 40–45 minutes until a toothpick comes out clean. Let cool before glazing.
- For the glaze, whisk powdered sugar and milk until smooth; drizzle over cooled loaf.
