  • 1 cup buttermilk

  • 1 cup walnuts, toasted & chopped
  • 2-3 medium ripe bananas, sliced
  • 1 Tbsp lemon juice
  • 2 Tbsp brown sugar
  • 2 cups heavy whipping cream
  • 0.25-0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • Extra walnuts, banana slices, chocolate shavings, or caramel drizzle

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Toast walnuts in a dry skillet over medium heat until fragrant. Set aside.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, beat butter and sugar until light and fluffy; add eggs one at a time.
  5. Fold in mashed bananas and buttermilk until just combined.
  6. Gradually mix dry ingredients into the wet mixture; fold in toasted walnuts.
  7. Divide batter between prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
  8. Cool completely before frosting with whipped cream made from chilled heavy cream mixed with powdered sugar and vanilla extract.
