- 4 boneless, skinless chicken breasts
- 2 oz cream cheese
- 2 tablespoons basil pesto
- 1 egg
- 2/3 cup breadcrumb mix
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese and basil pesto; season with salt and pepper.
- Create pockets in each chicken breast by slicing them horizontally (do not cut all the way through) and stuff generously with the filling.
- Dip stuffed chicken into whisked egg, then roll in breadcrumb mix until fully coated.
- Place in a baking dish, drizzle with olive oil, and bake for about 20 minutes or until chicken reaches an internal temperature of 165°F.
