  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1 cup whole wheat breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat oven to 425°F (220°C) and prepare a parchment-lined baking sheet.
  2. Butterfly and pound the chicken to about ¼ inch thick.
  3. Set up a breading station: flour in one bowl, whisked eggs in another, and breadcrumbs mixed with Parmesan and seasonings in the third.
  4. Coat each chicken cutlet first in flour, then in egg, and finally in the breadcrumb mixture.
  5. Place cutlets on the baking sheet and bake for 30 minutes total, flipping halfway through.
  6. Add marinara sauce and mozzarella on top of each cutlet; broil for 2 minutes until cheese melts.
