Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- ½ cup whole wheat flour
- 3 large eggs
- 1 cup whole wheat breadcrumbs
- ½ cup grated Parmesan cheese
- 1.5 cups marinara sauce
- 1.5 cups shredded mozzarella
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat oven to 425°F (220°C) and prepare a parchment-lined baking sheet.
- Butterfly and pound the chicken to about ¼ inch thick.
- Set up a breading station: flour in one bowl, whisked eggs in another, and breadcrumbs mixed with Parmesan and seasonings in the third.
- Coat each chicken cutlet first in flour, then in egg, and finally in the breadcrumb mixture.
- Place cutlets on the baking sheet and bake for 30 minutes total, flipping halfway through.
- Add marinara sauce and mozzarella on top of each cutlet; broil for 2 minutes until cheese melts.
