Ingredients
- 1 pound rigatoni pasta
- 2 boneless, skinless chicken breasts
- 4 cloves garlic
- 1 teaspoon Cajun seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 4 ounces cream cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 4 tablespoons butter, divided
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Cook rigatoni according to package instructions until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté seasoned chicken until golden brown; remove from skillet.
- In the same skillet, melt butter, sauté garlic, then add chicken broth and heavy cream. Stir in softened cream cheese and Parmesan until smooth.
- Return chicken to the skillet with rigatoni and mix well; top with remaining cheddar cheese before serving.
