  • 1 can (15 oz) chili beans (in sauce)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 cup Fritos corn chips
  • 1 cup sour cream
  • 1/2 cup salsa

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in chili seasoning mix, chili beans, kidney beans, and diced tomatoes. Simmer for 10-15 minutes until heated through.
  3. In a large bowl or serving dish, layer the shredded lettuce as the base.
  4. Spoon the warm chili mixture over the lettuce and top with cheese, cherry tomatoes, red onion, and optional black olives.
  5. Just before serving, sprinkle Fritos on top and drizzle with sour cream mixed with salsa.
