  • Salt
  • Pepper
  • 2 qt peanut oil (or other neutral frying oil)
  • 2 cups flour (divided)
  • 1 ½ tbsp Old Bay Seasoning (divided)
  • ½ tbsp paprika
  • 1 tsp turmeric
  • ½ tsp white pepper
  • ½ tsp baking powder
  • 1 large egg
  • 1 cup sparkling water
  • 4 chicken hamburger buns
  • 2 slices cheddar cheese
  • ½ cup mayonnaise
  • 3 tbsp dill pickle (diced)
  • 1 tbsp capers (diced)
  • 1 tbsp parsley (fresh chopped)
  • 1 tbsp lemon juice
  • 2 tsp Dijon mustard
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Heat peanut oil in a large heavy-bottom pan until it reaches 375°F.
  2. Prepare the tartar sauce by mixing mayonnaise, Dijon mustard, lemon juice, diced pickles, capers, and parsley; season with salt and pepper.
  3. Cut cod into 4-6 oz pieces and season with salt and pepper.
  4. Set up two dredging stations: one with flour mixed with Old Bay seasoning (dry) and another with flour, egg, sparkling water, and spices (wet).
  5. Coat each piece of cod first in dry dredge then dip in wet batter before frying.
  6. Fry each coated piece in hot oil for about 2-3 minutes per side until golden brown.
  7. Drain excess oil on a wire rack and steam hamburger buns briefly.
  8. Assemble sandwiches by spreading tartar sauce on the bottom bun, adding fried cod and cheese, topping with more sauce before placing the top bun.
