- 24 oz Cod (Icelandic Cod or similar fish)

- 2 qt peanut oil (or other neutral frying oil)
- 2 cups flour (divided)
- 1 ½ tbsp Old Bay Seasoning (divided)
- ½ tbsp paprika
- 1 tsp turmeric
- ½ tsp white pepper
- ½ tsp baking powder
- 1 large egg
- 1 cup sparkling water
- 4 chicken hamburger buns
- 2 slices cheddar cheese
- ½ cup mayonnaise
- 3 tbsp dill pickle (diced)
- 1 tbsp capers (diced)
- 1 tbsp parsley (fresh chopped)
- 1 tbsp lemon juice
- 2 tsp Dijon mustard
- Salt (to taste)
- Pepper (to taste)
Instructions
- Heat peanut oil in a large heavy-bottom pan until it reaches 375°F.
- Prepare the tartar sauce by mixing mayonnaise, Dijon mustard, lemon juice, diced pickles, capers, and parsley; season with salt and pepper.
- Cut cod into 4-6 oz pieces and season with salt and pepper.
- Set up two dredging stations: one with flour mixed with Old Bay seasoning (dry) and another with flour, egg, sparkling water, and spices (wet).
- Coat each piece of cod first in dry dredge then dip in wet batter before frying.
- Fry each coated piece in hot oil for about 2-3 minutes per side until golden brown.
- Drain excess oil on a wire rack and steam hamburger buns briefly.
- Assemble sandwiches by spreading tartar sauce on the bottom bun, adding fried cod and cheese, topping with more sauce before placing the top bun.
