  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/2 cup light olive oil
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 12 oz strawberries (hulled)
  • For the sauce: 16 oz strawberries (hulled and halved), 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine eggs, sugar, sour cream, olive oil, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  4. Fold in hulled strawberries gently.
  5. Pour into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for about 10 minutes before transferring to a cooling rack.
  7. For the sauce, simmer halved strawberries with sugar in a saucepan until syrupy (about 10 minutes).
  8. Serve slices topped with warm strawberry sauce.
