- 2 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup sour cream
- 1/2 cup light olive oil
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 12 oz strawberries (hulled)
- For the sauce: 16 oz strawberries (hulled and halved), 1/4 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, combine eggs, sugar, sour cream, olive oil, and vanilla extract until smooth.
- In another bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until just combined.
- Fold in hulled strawberries gently.
- Pour into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
- Let cool in the pan for about 10 minutes before transferring to a cooling rack.
- For the sauce, simmer halved strawberries with sugar in a saucepan until syrupy (about 10 minutes).
- Serve slices topped with warm strawberry sauce.
