Ingredients
- 16 oz coleslaw mix
- 15 oz can black beans, rinsed and well-drained
- 1.5 cups corn, canned (drained) or thawed frozen corn
- 1 red bell pepper, finely diced
- 1 cup grape tomatoes, halved (optional)
- 4 green onions, thinly sliced
- 1/2 cup chopped fresh cilantro
- 1 jalapeño, seeded and minced
- 2 to 3 cups Chili Cheese Fritos or regular Fritos, crushed tortilla chips, or tortilla strips
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 3 tablespoons fresh lime juice
- 2 tablespoons adobo sauce
- 1 tablespoon taco seasoning
- 1 teaspoon ground cumin
- 1 teaspoon honey (optional)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together all dressing ingredients until smooth.
- In a large bowl, combine coleslaw mix, black beans, corn, bell pepper, tomatoes (if using), green onions, cilantro, and jalapeño.
- Pour dressing over the salad and toss to coat evenly.
- For best flavor, cover and refrigerate for 20-30 minutes before serving.
- Just before serving, top with Fritos or your choice of crunchy topping.
