  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup brown sugar (packed)
  • 3 large ripe bananas (mashed)
  • 2 large eggs (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 1 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Prepare a 9×5 loaf pan with non-stick spray and parchment paper.
  2. In a bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, mash the ripe bananas until smooth.
  4. Whisk melted butter and brown sugar together until combined. Mix in mashed bananas, sour cream, and vanilla extract.
  5. Add eggs one at a time, stirring well after each addition. Gradually incorporate dry ingredients into the wet mixture until just combined; fold in chocolate chips.
  6. Pour batter into prepared loaf pan and sprinkle extra chocolate chips on top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool for ten minutes before transferring to a wire rack.
