Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together sweet rice flour, baking powder, and salt.
- In another bowl, combine coconut milk, sugar, eggs, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients and stir until just combined. Fold in shredded coconut and any fruity additions.
- Pour the batter into a greased baking dish and bake for about 35 minutes or until a toothpick inserted comes out clean.
- Allow cooling before slicing and serving.
